Charcool Stringy Beef
This is another great recipe for the whole family.
Like Pulled Pork it is a slow cooking, family meal which can be made as spicy as you like.
Ingredients:
1-2 kg Skirt Steak (check with your butcher)
2 Tbspoon ground cummin
2 Tbspoon ground corranider
2 Tbspoon paprika
2 tins on toms (crushed or whole)
1/2 cup tomato paste
1-2 cups beef stock
2 Tbspoon white vinegar (more if you like it tart)
2 Tbspoon brown sugar.
- Cut skirt steak into rough chunks
- Heat oil in large pot. Add the spices and cook off for 1-2 min
- Add meat in batches and cook until brown. Remove each batch.
- Once you have browned all of the meat put it back in the back in pot with the tinned tomatoes, tomato paste and the beef stock and cook slowly for 2-3 hours.
- Take each chunk of meat out and separate (shred) it using two forks. If it is done the meat will separate easily. If not, keep cooking.
- You will then have quite a thick soup (not as thick as some) that you add the meat back into add the vinegar and brown sugar and heat through. You can add a can of kidney beans, chilli or taco seasoning to give it a bit of a lift.
- Also makes a great nacho treat for the kids. Serve on corn chips with grated cheese and sour cream (if they like it).
Reheats well.
